100 Happy Days Challenge - Day 55

Made my first Raw Vegan Chocolate Spread.  I wanted to have something other than peanut butter to eat with my rice cake for snack.  So, I just whisked up some Vegan Chocolate Spread quickly and put the spread in the fridge.  It's gluten-free, soy-free, dairy-free and refined sugar-free.



Raw Vegan Chocolate Spread Recipe

Ingredients for app. 1/2 cup:

1/4 cup unsweetened cocoa powder, sifted if necessary
1/4 cup maple syrup
1 tbsp organic virgin coconut oil, melted

My lazy way of making the Raw Vegan Chocolate Spread is:

  1. Mix cocoa powder in maple syrup.
  2. Add coconut oil into the mixture. 
  3. Pour the spread into an air-tight container and store it in the fridge. 

My Chocolate Spread sure is sweet and taste good.  Is it healthy?  So, I tried to do the calculation of the basic nutrition values.

Unsweetened cocoa powder (1/4 cup / 20 g)
80 Calories       2 g Fat      8 g Total Carbohydrate      4 g Protein
* Saturated fat 1.2 g
* Fibre 8 g       Sugar 0 g

Maple syrup (1/4 cup / 60 ml)
202 Calories     0 g Fat     53 g Total Carbohydrate     0 g Protein
* Fibre 0 g       Sugar 53 g

Organic virgin coconut oil (1 tbsp / 15 ml)
130 Calories    14 g Fat      0 g Total Carbohydrate     0 g Protein
* Saturated fat 12 g = 60% of daily value for anyone on a 2,000 calorie diet !!! OMG !!!

Total: (app. 1/2 cup)
412 Calories    16 g Fat    61 g Total Carbohydrate     4 g Protein
* Saturated fat 13.2 g
* Fibre 8 g       Sugar 53 g

This spread is too fattening.  I better only use 1 tbsp for my snack. Then, the basic nutrition values will be:

Raw Vegan Chocolate Spread (1 tbsp)
51.5 Calories     2 g Fat    7.63 g Total Carbohydrate    0.5 g Protein
* Saturated fat 1.65 g
* Fibre 1 g       Sugar 6.63 g

Should I use banana, apple sauce or pear puree to sweeten my next raw vegan chocolate spread?  I want to lower the percentage of saturated fat and sugar in my spread.  Okay, please stay tuned for my new experiments in 2015.
