100 Happy Days Challenge - Day 56

My snack -  brown rice cake with peanut butter and raw vegan chocolate spread I made yesterday.  I tried to have a healthy snack under 200 calories and this rice cake snack is 187 calories.  Yeah !

Raw Vegan Chocolate Spread Recipe 

I'm happy that I can make this spread without my Magic Bullet or a food processor.  You may want to adjust the amount of cocoa powder and maple syrup just sweet enough for your liking.

* If the spread or the peanut butter is too cold to spread easily, please let it sit at room temperature for 1 to 2 minutes before serving.

The basic nutrition values:
Brown rice cake (1 pc / 9 g)
35 calories      0.4 g fat        7 g Total Carbohydrate        1 g Protein
* Saturated fat 0 g
* Fibre 0 g      Sugar 0 g

Peanut butter (1 tbsp / 15 g)
100 calories       8 g fat        3 g Total Carbohydrate        3 g Protein
* Saturated fat 1 g
* Fibre 1 g      Sugar 1 g

Raw Vegan Chocolate Spread (1 tbsp)
51.5 calories      2 g fat    7.63 g Total Carbohydrate     0.5 g Protein
* Saturated fat 1.65 g
* Fibre 1 g      Sugar 6.63 g

Brown Rice Cake Snack:
186.5 Calories    10.4 g Fat    17.63 g Total Carbohydrate     4.5 g Protein
* Saturated fat 2.65 g
* Fibre 2 g       Sugar 7.63 g

Why do I want to have a snack under 200 calories?  To keep my energy and blood sugar stable.  Please refer to a blog post I wrote last month.
Smart snacks under 200 calories

A good snack should including protein, complex carbs and healthy fats.  Cocoa powder is high in iron and coconut oil is high in lauric acid.  Then, I should eat my brown rice cake snack more often, right?
