I made banana milk with coconut water!  Dairy-free, nut-free and refined sugar-free.

100 Happy Days Challenge - Day 74

Made some dairy-free chocolate cups.

I made some dried cranberry with brown rice syrup and had 2  tablespoons (30 ml) of cranberry brown rice syrup sauce left over inside the fridge.  So, I added cocoa powder, coconut oil and maple syrup to make chocolate cups with silicone muffin cups.  Dairy-free, soy-free and refined sugar-free, my friends.

Really like the chocolate cups with a tint of red colour from the cranberry brown rice syrup sauce.

Why did I cut it?  I only want to eat 1/4 of the chocolate cup per day.  Too rich and too sweet to eat the whole thing.  Next time I should make chocolate truffles instead.

100 Happy Days Challenge - Day 72

Following one of my Japanese friends' instructions,  I made some Japanese style pickled cucumber.

My dad used to cut cucumber in paper-thin slices when he made salad.  Instead of using a vegetable slicer, dad was the human cucumber slicer in our family.  I tried to cut cucumber in paper-thin slices but some of them were 2 mm thick.

Why didn't I use a vegetable slicer?  Hey, I'm my dad's daughter.  If my dad can do it, I can do it too.  It's in the genes, my friends.  Well, just need to practice doing it more often.

My Japanese friends won't cut cucumber into very thin slices when they pickle the cucumber, though.

Made another apricot smoothie !  This time I used apple sauce instead of banana.  Well, it's still not as sweet as I want.  I think I get used to the tangy apricots.  So I didn't try to add any sweeteners into my smoothie.  All natural.

Made my first Raw Vegan Chocolate Spread.  I wanted to have something other than peanut butter to eat with my rice cake for snack.  So, I just whisked up some Vegan Chocolate Spread quickly and put the spread in the fridge.  It's gluten-free, soy-free, dairy-free and refined sugar-free.

My sis wanted a hand cream, so, I used what we have at home to make one.  Well, this is a light cream, we can use it for hands, feet, face or body.  Very easy to make with only 4 ingredients - organic shea butter, organic virgin coconut oil, bees wax and vitamin E oil from vitamin E capsules.

Only 4 ingredients to make this crust, my friends.   Unsweetened shredded coconut, unsweetened cocoa powder, maple syrup and coconut oil.

Made and drank another smoothie today.  My second smoothie ever!  Yesterday's smoothie was very brown.  I wanted my smoothie with bright vivid colour same as the ones in recipe books.  So, I dug out  my bag of frozen cherries and added them into my smoothie.  Well, you can see the result.  The colour was not as beautiful as I wanted.  The taste?  Without banana, it's not as sweet as I wanted, either.  I guess this is why people usually add banana inside their smoothies.

Made and drank my first smoothie today.  My friends were very surprised, or shocked when I told them I've never had a smoothie before.  Well, some of them encouraged me to make one.  I have apples, bananas and unsweetened almond milk at home so I made one.

It was very sweet and it tasted good.
