I have been using quinoa flour for almost a year now. With the success making black rice flour and brown rice flour, I decided to make more DIY flour. So, I bought a box of PC Organics Quinoa.

Quinoa, which is a very trendy food, provides protein, fiber, vitamins and minerals.
We should have a better nutrition facts label. It is missing the info for all vitamins and minerals.
Quinoa's vitamins:
vitamin B1, B2, B3, B5, B6, B9 and vitamin E.
Quinoa's minerals:
Calcium, Iron, Magnesium, Phosphorus, Potassium and Zinc.
Recently, there is a new competition for quinoa - amaranth. They are both not only contain quality protein, fiber, vitamins and minerals, also gluten-free. After I finish my box of quinoa, I will see where I can buy some amaranth to make flour.

wait, this is from the box. Ingredients:
Organic whole grain quinoa. MAY CONTAIN
WHEAT. Quinoa is gluten-free but PC
Organics Quinoa is not. Too bad.
