Gordon Ramsay's Beef Wellington and Pan-Seared Scallop Dish - YouTube videos and recipes

MasterChef US (CTV / Fox) is one of mum's favourite cooking reality shows.  Did you watch it last Wednesday (July 8)?  In this season 6 episode 9,  all the contestants made Gordon Ramsay's signature dish - Beef Wellington.

I was very interested in how Gordon Ramsay usually makes it.  So, I went to his YouTube channel.  Yes, there is a video of it.

Ah Hah !  Chef Ramsay shows us some tricks to make a perfect medium rare Beef Wellington.  But where is the recipe?

As always, I Goggled it.

Back to MasterChef US.  At the second half of the show, 6 of the contestants had to cook Gordon Ramsay’s beautifully arranged Pan-Seared Scallop Dish with scallops, quails eggs, pancetta, pea puree and truffle.

Director of MasterChef US really knows how to film and edit the sequence of Chef Ramsay cooking the scallops.  It was so poetic, elegant and pleasant to watch.  Like looking at the best ballet dancer dancing when he cooks.  His cooking montage makes me want to dash to Chef Ramsay's Culinary School to learn how to cook.

This dish's video is harder to search from the net.  This is the one I got.

Just in case you don't know how he looks like.

Even though it's the same person cooking the scallops, Chef Ramsay doesn't move as elegant as in the MasterChef US.  Fox, you guys are awesome !  You guys make cooking cool !

I found a recipe online but the ingredients of the recipe and the video are not the same.  Well, we get an idea of how chef Ramsay cooks his scallops, though.

P.S.  One of my friends let me borrow her "Gordon Ramsay's Ultimate Cookery Course".  In the book, there is a "Pan-fried scallops with crunchy apple salad" recipe.  I should start learning his techniques from the book.  Will you want to make his version of the American classic Mac and Cheese?

Hope you’re enjoying your weekend, my friends.  I found another how-to video to make ice cream dessert - ice cream sandwiches.

Ice cream cakes are easy to make, right?  If you watch the how-to videos in my blog post Making ice cream cakes - how-to videos from Loblaws, you will agree with me.

Ice cream sandwiches are even easier to make.  Just put one scoop of ice cream between two soft cookies!  Here is a short how-to video from Sobeys TV.

100 Happy Days Challenge - Day 25


Finally I did it!  I have been helping one of my friends to convert her 473 files for days.  Ooops, sorry, I lied.  I converted 467 files.  6 files failed to get converted.  After several attempts, we just gave up and kept the original format of the files. 


This is a thank you gift from my friend.  A jar of maple butter, mmm... yum 

What is maple butter?

Maple syrup cooked down to creamy, buttery consistency.

How to use maple butter?
  1. spread on warm toast, muffins, scones, cupcakes, pancakes, waffles or bagels
  2. use it as a glaze for cookies, salmon, chicken or turkey
  3. eat it out of a jar with your fingers or a spoon
  4. cook and bake with it
If you like maple syrup, please try some maple butter.  You may like it more than honey.

100 Happy Days Challenge - Day 22

Bought some ground flaxseed.  Many years ago, one Chinese American dietitian taught me how to use flaxseeds for egg replacement.  At that time, we only ate ground flaxseed because of its nutrition value (omega-3 fatty acids, vitamin E, vitamin B-complex, manganese, potassium, calcium, iron, magnesium, zinc and selenium).  



Now, one of our family members can't eat egg.  So, I soak ground flaxseed in hot water for about 5 minutes, then, stir flaxseed mixture well to make "eggs" for baking.

1 tablespoon ground flaxseed + 3 tablespoons hot water = 1 egg
2 tablespoons ground flaxseed + 6 tablespoons hot water = 2 eggs
3 tablespoons ground flaxseed + 9 tablespoons hot water = 3 eggs

and so on...

One of my friends just told me to always grind whole flax seeds fresh.  It is because the omega-3 inside flax seeds is highly unstable and very easy to get oxidized.  So, from now on, I'll buy flax seeds, ground them myself and make my own "eggs".

Chef Donna Dooher's Basic Pastry, Simply the Best

Homemade Oat flour - easy and affordable

Don't you find it pricey to buy oat flour?  We can just use our rolled oats at home to make some oat flour for baking.  I'm not kidding, my friends.  It's easy and good for our wallets.  I use Quaker Large Flake Oats from local supermarkets.

Substitute sugar with maple syrup or honey

I don't buy or use refined white sugar anymore.  So, I replace it with organic sugar or brown sugar.  Lately, I substitute any kind of sugar with maple syrup or honey.
